Cider 2: "brewed" 20091010 Pitched 2 gal. Carrizozo cider (but not from zozo?) onto nottingham yeast cake from MT1 primary. 12% brix (1.049) 20091102: 6% brix (1.008). Nice tartness, lightly sweet. Gas blowoff has subsided significantly. 20091108: In keezer to clear. 20091115: Racked to 2x 1 gallon jugs and back in the keezer to clear some more. Tastes nice. It's tart with a little residual sweetness. A mild off flavor that I believe to be yeast. 20091202: Crystal clear. Very, very mild. Nice tartness with a little residual sugar. I wish it had more flavor, but what's there is nice. Yeasty flavor is imperceptable. 20091209: Bottled a gallon. Absolutely gorgeous! 20100509: This is pretty bland stuff. I should have stabilized and added the pear juice like I wanted. I made some rib glaze that was lovely (reduced the cider and augmented with deli mustard, brown sugar some dried spices and butter). 20100802: Used the last bottle for ribs.
