NE1: (new extract. New beause I'm keeping track again). Brewed 20090912 This was a quickie to fill in the gap between AG2 and the arrival of mill and 62lb of grain for the TM (tour of malts) batches. Picked up 3.3lb muntons light LME and 3.3lb muntons amber LME and 1lb unmalted roasted 6row from coyote. Steeped 1/2 lb while heating 5gal to 170F. Killed flame, added 1oz Zeus (15%) as FWH and stirred in LME. Didn't like the color so continued steeping and added the other 1/2lb of roasted 6row to steep for about 30min. Restarted flame and removed grains at 170. 60min boil. Added 1oz cascade at 30 and 2. Also added 1tsp irish moss at 2 (first time). Irish moss did seem to help the hops settle, but I also chilled this time without stirring at all. Chilled to ~90F and gently racked to carboy. In cool storage until it's at pitching temps. Wort is quite bitter (Zeus is no joke!) Pitching 6g Munton's (rehydrated) Used 1 1/4% O.D. blowoff into a 3qt jar with a bit of sanitizer. Was nearly overflowed the next day. Re-fitted with normal 5/16 blowoff into a 1l water bottle. No blowoff +2days. Racked to 2ndary 20090920. Still very bitter. Color seems to have darkened a bit, and definitely has some roasted barley character. Measures 7.5% brix, which is probbaly too low. Didn't get an OG, but BT estimates 1.049 (12%). Gives FG of 1.018 and 4.07% ABV. why does every dark beer I do end up under attenuated? Maybe it's extract related, because AG1 and AG2 got better than 1.010. 20091115: About 1/3 the way through this and really liking it. The Zeus is probably a bit much, but it's actually really nice with the roasted barley. Almost like espresso. Not alot of depth though, some crystal additions would add a bit to it. Zeus is all bitter. Darks get lower attenuation becuase the sugars from the dark roasted malts are less fermentable, stupid!
