Drained remainder to kettle. Batch sparged with infusion to 168. vorlauf 2qt. Pre-boil volume ~5.5 gal, gravity 13% brix (1.053). Boiled down to about 4.5 gal, topped off to 5 gal. OG 12.6^ (1.051) BrewTarget shows 1.055@70%, 1.051@65% ProMash shows 1.063@70%, 1.051@57% Wyeast Northwestern didn't do anything in the 500mL starter after 16h, but pitched anyway. No activity +24h. Pitched 11g Nottingnam dry 20090830. Target FG 1.010, 5.3% ABV (BrewTarget) Active fermentation +6h after pitching Nottingham 20090907, racked to 2ndary. 5.6% brix (1.004, 6.1%) Added .5oz cascade, .5oz sterling for dry hop. 20090912, into cold storage 20090928, racked to keg and started carbonation FG 5.6% (1.004, 6.1%) 20091004, tasted. A bit cloudy. Good bitterness, hop flavor and aroma. Not as aggressive as expected, but definitely on the hoppy side.
